A sustainable value chain

Opened in June 2018 at Zug railway station in Switzerland, the pop-up concept “Dörfli” covered 1,300 m² and brought together gastronomy, events, knowledge exchange and immersive experiences. Guided by the principle of “bringing yesterday’s harvest straight to today’s plates,” fresh ingredients were sourced directly from regional organic farmers.

By doing so, harvest schedules are no longer dictated by wholesalers — instead, the people who grow the food decide when it is truly ripe. This not only keeps transport distances short, but also ensures the highest possible quality on the plate and full transparency about where the ingredients come from.

Digital platform

Ordering via app

The sustainable business model is enabled through a digital platform that maps the entire value chain — from food production to consumption. To reduce food waste through better planning, guests can pre-order their meals via the app and receive a discount in return.

Through the puurpuur app, guests can not only order lunch in advance, but also stay informed about upcoming events and reserve tables directly at the restaurant.

Michael supported the Swiss start-up from the very beginning of the project, contributing to the development of the concept and business model and taking strategic responsibility for the content and structure of the digital platform.

Together with Sabine Besjaew from cüvee, Eva led the entire communication design — from naming and brand development to corporate design, UX/UI for the app and website, and the on-site visual experience.
